I have missed you all so much! These past couple months have been incredibly busy for me. Lots going on ~ both good and bad. But I’M BACK!! And I have some delicious recipes to share with you all because as you know, there’s no shortage of food over here. 🙂
I had actually made this recipe for Superbowl weekend! I was afraid it wouldn’t get eaten since I only once before attempted to make this. I’ve never actually made these for a group before and unfortunately in my house hold I’m the only health freak! LOL So I kept my fingers crossed that everyone would like them.
Lets get one thing straight here. I’m not a vegan by any means…I LOVE MY MEAT!!! #MeatEaterForLife ….BUT
I’m trying to be healthier than I’ve ever been! So that means going meatless whenever possible (or at the very least, sticking to lean meats like chicken, turkey or salmon instead of beef). It’s not easy, but if you can make a vegan dish taste delicious, then why not, right?
Anyways, after worrying no one would like this vegan version of buffalo wings, I was surprised that it was such a HIT! I served it with some carrot and celery sticks plus a side of Dairy-Free Ranch dipping sauce.
It was seriously BOMB!
NOTE: They look a bit funny at first when you bake them in the batter since the batter runs at first and once it bakes, it hardens like that. BUT what I ended up doing is breaking off the part of the runny batter that hardened. This helps make them look more visually appealing.
These buffalo wings are:
- Low calorie
- Meaty consistency
- Good source of plant protein
- Quick and easy to make
- Only 11 ingredients
