Cauliflower Rice Chicken Stir-Fry

Did you know that you can make so many different dishes with one head of cauliflower? I haven’t had the pleasure of trying them all just yet but over the weekend I thought why not try something unique. I love rice, especially brown rice but I wanted to stay away from the extra carbs so this dish was born.


Its quick and easy to make plus extremely healthy.

Cauliflower Rice Chicken Stir-Fry



Serves 2-3 people

Dairy-Free // Gluten-Free // Grain-Free // Paleo

  • 2 plain organic chicken breasts – boiled and shredded
  • 1 cup fresh organic cauliflower – finely chopped in a food processor
  • 2 tbsp ground paprika
  • 1 tbsp ground chili powder (add more if you want it spicier)
  • 1/2 organic red bell pepper – sliced
  • 1/4 organic red onion – sliced
  • 1/2 cup hand-crushed organic walnuts
  • 1/2 cup organic cashews
  • 10 organic baby carrots – sliced length wise
  • 1/2 cup sweetened coconut milk
  • salt and pepper to taste
  • olive oil for cooking 



  1. Over medium-high heat, add enough olive oil to lightly coat the bottom of a medium pan.
  2. Add your shredded chicken, cauliflower, paprika, chili powder, salt and pepper.
  3. Lightly fry until chicken starts to brown.
  4. Add the remaining ingredients; stir well and continue cooking uncovered for approx. 5-8 minutes or until milk is {almost or fully} absorbed.
  5. Optional: serve with tortilla chips and/or topped with diced avocado.
  6. ENJOY! 🙂






You wouldn’t normally eat a stir-fry with tortilla chips LOL but we did with this one…and it tastes so delicious together!
