Pumpkin Oatmeal Cookies {Vegan+GF}

Happy Halloween guys and ghouls!

I hope you all enjoyed the Halloween weekend and stayed safe through all the madness 🙂

It was so rainy and gloom yesterday that I decided to bake some Halloween inspired cookies (minus decorations), since I was in the mood for something simple and sweet. #ImAlwaysInTheMoodForSweets

These little goodies came out super soft and moist and delicious. They’re so good that they’re almost all gone – I’ll have to make MORE!



I just had to use up some more of my leftover pumpkin puree (I have so much of it right now!). Eeeek…


So as you may have noticed I’ve been on a pumpkin hype these last several days ~ but can you blame me ??

No, please done! ~~> blame Halloween 🙂



Pumpkin Oatmeal Cookies {Vegan + GF}


Serves 15 people

Vegan // Dairy-Free // Gluten-Free // Soy-Free // Nut-Free

  • 3/4 cup unsweetened coconut hemp milk (use about 1/2 cup if you want the batter to be thicker)
  • 3 tablespoons coconut oil
  • 1/2 cup organic pumpkin purée
  • 1 tbsp organic maple syrup
  • 1 cup gluten-free Quaker Oats Quick 1-minute Oatmeal
  • 1/2 cup natural skippy peanut butter
  • 3 tbsp flaxseed meal
  • 3 tsp shredded coconut
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg



  1. Preheat oven to 350 degrees and line a baking sheet with wax paper.
  2. Add milk, oil, and maple syrup in a medium saucepan and bring to a low boil over medium heat, stirring frequently.
  3. Once is starts to bubble, let it thoroughly boil for 1 minute, then remove from heat.
  4. In a large bowl add the remaining ingredients then pour the boiled milk over the top; MIX WELL.
  5. Drop large scoops of the batter onto the prepared baking sheet (I used an ice scream scooper).
  6. Pop in the oven for 15 minutes.
  7. Remove from the oven and let sit for about 30 minutes to cool and harden. 
  8. OPTIONAL STEP: Place in the refrigerator for about 15 minutes to cool and harden (cookies will be firmer doing this step).
  9. ENJOY!🙂


These cookies will store great and keep fresh in the fridge for about 5 days. They taste AMAZING the next morning with a cup of hot coffee! #HEAVEN
