2 Ingredient Pancakes (Gluten-Free & Dairy-Free)


  • 1 large banana
  • 1 egg


  1. Place the banana in a bowl and with a fork, mash it up really well (it’s ok to leave a few small chunks).
  2. Add the egg and start mixing together until really frothy.
  3. Heat some olive or coconut oil in a pan.
  4. Add your banana/egg batter into small piles (whatever comfortably fits in the pan).
  5. Let in bubble up slightly and then flip.
  6. Check it frequently as it should be done in about 2 minutes.
