- 1 large banana
- 1 egg
- Place the banana in a bowl and with a fork, mash it up really well (it’s ok to leave a few small chunks).
- Add the egg and start mixing together until really frothy.
- Heat some olive or coconut oil in a pan.
- Add your banana/egg batter into small piles (whatever comfortably fits in the pan).
- Let in bubble up slightly and then flip.
- Check it frequently as it should be done in about 2 minutes.
