Cucumber-Apple Salad

This colorful salad provides your body with: antioxidants (carotenoids, lutein and zeaxanthin), vitamin K, vitamin C, magnesium, potassium, manganese, vitamin A, thiamin, riboflavin, B-6, folate, pantothenic acid, calcium, iron, fiber, phosphorus, zinc, lignans, copper, protein, omega-3 and omega-6.

• 1 organic cucumber
• 1 organic orange bell pepper
• 1 organic Fuji Apple
• 1 1/2 organic carrots
• 1/2 cup hemp seeds
• salt and pepper
• olive oil
• Apple cider vinegar (or sometimes I use lemon or lime juice)

Dice the bell pepper and apple, slice the cucumber into half moons, and shred the carrots. Add the hemp seeds, then salt, pepper, oil and vinegar. Mix everything together and enjoy!
